Brunch in Babylon is getting its latest refresh, at Millie’s Mimosa House and Eatery, which has opened in the former Don Ricardo's on a prime stretch of East Main Street in the village. The spot was last home to another brunch concept, Mack's, which closed over the summer.

The two-floor eatery serves breakfast and lunch in a remodeled space (think breezy sky blues and white) designed to transport guests to the muse, the French Riviera. The menu offers elevated takes on quintessential brunch dishes such as lemon meringue French toast ($16.95) and a riff on eggs Benedict with duck confit ($23.95).
"We thought the town warranted a bit more of the high-end feel," said chef-owner Rob Mathews, who runs the spot with his wife, Ali. Mathews has worked in the kitchen at La Plage in Wading River and The Country House in Stony Brook.
Millie's, which is named after Matthews' grandmother, takes a specific approach to mimosas, treating the classic brunch drink as more of a cocktail and less of "just your regular juice and Champagne thrown in there," Mathews said. The Capri Sun ($12) is made with mango-orange juices and a raspberry puree. The Evil Queen ($12) winks to the classic Brothers Grimm fairy tale with apple juice, raspberry puree and caramel.
Millie’s Mimosa House, 94 E. Main St., Babylon, 631-526-9774. Open 8 a.m. to 3 p.m. Monday through Friday, 7:30 a.m. to 3:30 p.m. Saturday and Sunday.
